Herb Sliced Potatoes

Slice to 1/4 inch cubes red or brown potatoes
put into baking dish

Drizzle with Extra virgin olive oil
sprinkle with salt to taste
sprinkle with pepper and garlic powder
sprinkle with minced garlic (2tsp/2 cloves)
sprinkle with dried parsley, thyme and rosemary

mix to blend thoroughly
Cook 375 20-30 min

The England Leeds Mission Birthday Cookies

1c. brown sugar
1c. white sugar
1c butter/or margarine
2 large eggs
1t. vanilla
1t. Baking powder
1t. Baking Soda
1/3t salt
3c. Quick oats
2c. flour
1c. chocolate chips
1c. coconut

Mix sugars, butter, eggs and vanilla until creamy. Add dry ingredients. Mix well, stir in choc. chips, coconut. Form large mounts with ice cream scoop onto greased cookie sheet. Bake 350 for 8-10 min. Allow to partially cool on sheet before removing
ENJOY

Tuna Noodle Casserole

Mix together:
1 can of tuna
1/2c milk
1/2c. mayo
1can cream of chicken soup

Pre cook Penne (six servings)
Frozen peas (W/Pearl onions)
Chop celery and dry onion- add to mixture

Put in 9x13 or 10x12 casserole dish grate cheddar cheese on top and sprinkle with bread crumbs
Bake at 350 for 20 min

Options sub Green peppers for peas

Pot Roast

3-4lb Roast (Beef, Neck, Chuck, Bottom Round)
2-3 potatoes peeled and sliced
2-3 carrots peeled and sliced
1-2 onions peeled and sliced
Garlic
1 cup beef broth
1 package of Lipton onion soup

Put all veggies in the bottom of crock pot
salt and pepper (bottom of roast)
Put garlic cloves in meat
put meat in crock pot
Sprinkle dry soup over meat
add liquid
Cook on High for 4-5 hours
on low for 8-10 hours

Patti's Pork Roast

Pork Shoulder Roast
Sprinkle Lipton Onion Soup over Top
Bake in covered Roasting Pan/Dutch Oven

325 degree oven about 2 hours for a 4lb roast
should be 170 degrees in the center

Sweet Milk Bread

1 1/4c. warm water
1/2c (about half a can) sweetened condensed milk
2Tb margarine
2t. salt
4 1/2c flour (may substitute 1/2 whole wheat flour)
3t yeast

Combine water, milk, margarine, and yeast. Let sit for 10 minutes. Add salt and flour mixture. Mix well. Knead in enough flour to make firm but sticky dough. Knead until until elastic texture. Let rise until double. Punch down and let rise again put in 2 grease bread pans and let rise again. Bake in 350 oven for 30 min or until done. Cool on wire racks.

Salsa Chicken

12 Boneless, Skinless Chicken thighs (about 2 1/2 pounds)
1t. Salt
1Tb oil
1/2c. Salsa
1-15 oz can Black Beans, rinsed and drained
1-11 oz can whole kernel corn, drained
2Tb. Chopped fresh cilantro

Sprinkle chicken with salt and brown in a skillet. Mix salsa, Beans and corn in 3 1/2- 5 quart crock pot. Top with chicken. Cover and cook on low for 7-9 hours or until juice of chicken is no longer pink when centers of thickest pieces are cut. Sprinkle with cilantro and serve

Oprah's Mock Caesar Salad

2 Garlic Cloves peeled and minced
1/4c. Reduced Sodium soy sauce
1/4c. Freshly squeezed lemon juice
3c. Chopped Belgian endive (about 4 heads)
6c. Torn Romaine lettuce (about 2 heads)
1/8t Black pepper
1Tb. Parmesan Cheese
1 1/3c. Chopped Tomatoes (1 Large Tomato)

Put Garlic, Soy sauce, lemon juice in a salad bowl and whisk thoroughly add the endive and romaine lettuce. Toss to coat.
Sprinkle the black pepper and Parmesan cheese on top

Would be great with cooked cubed chicken as well

Deep Dish Peach Cobbler

1/2 Stick butter
1/2c. sugar
4c. fresh peaches, peeled and slices
melt the butter in pan. Combine peaches and sugar (set aside)
if using canned peaches, drain juice and don't ADD extra sugar

3/4c. flour
3/4c. milk
1/2t. salt
1c. sugar
2t. baking powder

Pour batter over butter and pour fruit on top DO NOT STIR! Bake at 350 for 1 hour

Mom Milne Cinamon Buns

1. Grease Bundt Pan or sue a 9x13 pan

2. Add 18 Freezer Buns (1/2 package) cooked (NOT INSTANT) Butterscotch pudding & 1 1/4t Cinnamon

3. Mix 1/3c. melted butter and 1/3c. brown sugar pour on top

4. Cover w/towel and let rise over night

5. Bake @ 325 for 30 minutes
*remove from pan by turning over as soon as it comes out of the oven

Rosie's Pizza Sauce

1Tb. Tomato Paste
1C. Tomato Puree
1/8t. crushed red pepper
2t. Dried oregano
2t. dried basil
2t dried thyme

Combine all the ingredients in a small saucepan and cook over low heat for 15 minutes until sauce thickens

makes 1/2c.

Gallo Chicken

3t Butter

4 boneless chicken breasts

1 box of stuffing

1 can cream of chicken soup

1 cup sour cream



Put melted butter on the bottom of the pan then put the cooked, bite-size chicken on the bottom of the pan. Mix the soup and sour cream together and put on top of the chicken. Then put the box of cooked stuffing on top of the casserole. Cook at 350 for 30-40 minutes

Funeral Potatos

1pk Hash Browns
1/2 c. Melted Butter
1 can Cream of Chicken Soup
2c. Sour Cream
2c. Cheese Shredded
1t. Salt
1t pepper
1 1/2c. Corn Flakes
1/2c. Melted Butter

Mix Hash Browns, Butter, Sour Cream, Soup, Cheese, Salt and Pepper
Butter 9x13 pan fill with mixture
Mix Corn Flakes and butter
Put on top
Cook @350 for 45 min

Manicotti

12Large Manicotti shells
4c. Shredded mozzarella cheese, divided
2 cups ricotta cheese
6Tb chopped fresh basil or 2Tb dried basil
1 (26oz) jar spaghetti sauce
1/2c grated Parmesan cheese

Preheat Oven to 350. Spray 13x9 inch baking dish with nonstick cooking spray

Cook pasta according to past directions, Drain and rinse with cook water. Let pasta dry on paper towel

For filling, in medium bowl stir together 3c. mozzarella with ricotta and basil using a teaspoon carefully stuff paste shells with cheese mixture

Spoon 2 c. Spaghetti sauce into prepared baking dish arrange stuffed pasta over sauce. Pour remaining spaghetti sauce over top of pasta sprinkle with remaining mozzarella

Bake manicotti for 15 minutes Sprinkle with the Parmesan bake for 10 minutes longer serve immediately

Oven Roasted Potatoes

1 Envelope of Lipton Onion Soup Mix
2 pounds of potatoes, cut into chunks
1/2c. Olive or vegetable Oil

Preheat oven to 450.

In large plastic bag, add all ingredients close bag and shake until potatoes are evenly coated.
Empty potatoes into baking pan, discard bag.
Bake, stirring occasionally for 40 minutes or until potatoes are tender and golden brown

Ali's Breadsticks

2 1/2t. rapid rise yeast
1 1/2 cup warm water
1t. salt
1Tb sugar
3c. flour- add more as needed

mix first four ingredients let sit 10 minutes. Stir in flour and knead-rise
Bake at 400 for 10-15 minutes watch carefully



This also makes bread/scones/rolls/bagels/bread dough/pizza

Bagels- shape ad let rise boil in water and set on baking sheet and spread egg white over
Bake at 400 for 10-15 minutes watch carefully

Chicken Tortilla Soup

2 skinless, boneless chicken breast halves (about 2/3 pounds total)
1/2t olive oil
1c. frozen chopped onions (or fresh)
1Tb Fresh or bottle lime juice
1/2t minced garlic
1/2t. chili powder
1/4t. ground cumin
2 cans (14 1/2 oz each) fat free Chicken broth
1c. bottled salsa
1c. frozen corn
4 oz tortilla chips (for 2 1/2 crushed)
1/4c.shredded Monterrey Jack Cheese

Heat oil on low in a 4 1/2 quart dutch oven or soup pot. Cut the chicken into bite-size chunks,adding them to the pot as you cut. Raise the heat to high and cook for 2 minutes, stirring occasionally

Add the onions, lime juice, garlic, chili powder and cumin. Cook for 2 minutes

Add the broth, salsa and corn. Stir to mix cover the pot and bring the broth to a boil. Reduce the heat to med-high and continue to boil 8 to 10 minutes to develop the flavor

Meanwhile crush the tortilla chips slightly. Place the crushed chips into 6 soup bowls. Ladle the soup into the bowls. Sprinkle each portion with cheese and serve

Dough for Pizza crust or French Bread

6c. warm water
3 Tb yeast
1/2c. Sugar
1/2c. Oil
2Tb Salt
3 Eggs
Add 16-17c. Flour

Combine ingredients, kneed in flour knead bread for 15 min cover with wet cloth. Let rise for 1-11/2 hours
Form into loaves bake at 350 for 20-30 min or until light brown

Linda's Pumpkin Pie from Scratch

2 Egg slightly beaten
1 1/2c. pumpkin
3/4c. sugar
1/2t salt
1t. cinnamon
1/2t. ginger
1/4t. cloves
1 2/3c (1 can) evaporated milk

Mix in order given. Pour into pie shell. Bake425 for 15 min. Reduce to 350 cook for 45 more minutes (20-30 minutes if shallow pan) Done when knife comes out clean

Scoop out seeds and cut up pumpkin
Bake at 375 for one hour or until soft. (I peel off top and bottom and sides) Scoot out pumpkin. Puree in blender and strain in sifter overnight. Measure out

Quick and Easy Pork Chops

6 pork chops (or chicken)
2c. instant rice
2c. orange juice
1 can cream of mushroom soup (or cream of chicken if you don't like mushrooms)

Brown pork chops, place rice in baking dish cover with OJ. Place pork chops on top. Cover with soup and bake covered for 35 minutes at 350. Uncover and cook for 10 more minutes

Easy Cheesy Chicken

Place 4 boneless skinless chicken breast in baking dish
Sprinkle with 4 oz of shredded cheddar cheese
Spread a can of cream of chicken soup over top
Sprinkle with 1c dry stuffing mix, crumbly type.
Drizzle with 1/2 stick of melted butter.
Bake at 350 for 1 hour

Chicken/Turkey Tetrazinni

Boil 8 oz of spaghetti

white sauce
5 Tb. Butter or Margarine
6Tb Flour
3c. Chicken broth
1c. milk
salt and pepper to taste

bring all ingredients to a boil then turn down to med. Sauce will being to thicken

1c. Mushrooms
5Tb. Green Peppers
3c. Cooked Chicken/Turkey
Garlic
Salt
1/2c grated Parmesan

Mix all together and enjoy

Beef Brisket

4Tb. Brown Sugar
4Tb. Soy Sauce
12 oz pineapple juice
1 pkg Dry Onion Soup mix

Mix all ingredients together. Pour over 3 LB Beef Brisket. Put Double foil over it and leave in the fridge all day.

In the evening bake at 325 for 2 1/2 hours, Turn off oven leaving brisket in oven all night. In the morning, slice it against the grain

Put back in juice, replace foil and refrigerate all day. Before serving put in 350 oven for 1/2 hour

German Pancakes

6 Eggs
1c. flour
1c. milk
5Tb. Butter

Mix Eggs, Flour and milk together in blender
Put butter in the bottom of 9x13 pan put in oven until melted

Melissa B. Swiss Chicken

8 skinless, boneless chicken
8 slices of Swiss cheese
2 cans cream of chicken soup
1/4c. water
2c. Stuffing or seasoned croutons (crushed)
1/3c. of melted butter

Wash and pat dry the chicken. Place in a greased 9x13 pan. Place a slice of Swiss cheese on top of each piece of chicken. In a separate bowl mix the cream of chicken soup and water. Then spread over the chicken. Sprinkle the stuffing and apply the melted butter to the top. Bake for 50-60 min at 350 uncovered

Raspberry Slush

3 packages unsweetened raspberry punch powder
1-6 oz frozen OJ
1-6oz frozen Hawaiian punch
3c sugar
2 quarts cold water
Mix together in large containers and freeze. Serve with 7up or sprite

Serves 25

Breakfast Drink

2c. Pineapple Juice
2 ripe med banana sliced
2 cartons vanilla yogurt
1c. fresh or frozen strawberry's
1/4c. wheat germ
1t.. Vanilla

Mix in blender until smooth

Orange Juiles

1c. water
1c. milk
1 cap full vanilla
1/2c. sugar
OJ concentrate (as much as you need for taste you like)
Ice Cubes
Put everything into the blender and mix until smooth and thick

Bananna Blitz

2 Bananas (frozen)
1c milk
1/2c sugar
1t. vanilla
1 to 1 1/2 c ice cubes
1/3 c Orange concentrate
1 c. milk
1c. water

Blend together and enjoy

Emily's Taco Soup

1lb Hamburger
1 onion chopped Brown (with hamburger)

1 can veg. soup (26oz)
1pt salsa
1qt canned chopped tomatoes
1-2 can kidney beans

mix all the ingredients together and warm. Serve over Frito's or tortilla chips and sprinkle with cheese and or sour cream

*Can warm in crock pot
*Can freeze extras in freezer bag and thaw in fridge over night and then heat through

Chocolate Eclair Cake

1 box of Graham Crackers
2sm boxes instant french vanilla pudding
8 oz cool whip
3c. milk

Line a 9x13 pan with graham crackers. Mix together pudding, milk and cool whip. Spread half of the pudding mixture over crackers. Add another layer of crackers. Pour the rest of the pudding mixture on that. Add another layer of crackers on top. Refrigerate over night. In the morning make the frosting

Frosting
2pkg Nestle choc-o-bake
2Tb soft butter
2 Tb white corn syrup (Karo)
3Tb Milk
1t vanilla
Mix well and spread over cake. Refrigerate an additional 3-4 hours
